For our final Thanksgiving leftover recipe, we're featuring a recipe that only requires chopping ingredients - no cooking at all! So, if you're tired of food prep and being at the stove - look no further. This recipe for turkey salad was adapted from Once Upon a Chef. We hope you enjoy it as much as we did!
What you'll need for this recipe:
4 cups chopped smoked turkey
Salt & pepper, to taste
1/2 cup mayo
1/2 cup sour cream
2.5 T lemon juice, from 1 lemon
1 t Dijon mustard
1 T sugar
3 stalks celery, finely diced
4 large scallions, light & dark parts, thinly sliced
1.5 cup grapes, halved
1 cup almonds, sliced or chopped
2 T flat-leaf parsley
1 T fresh dill
Instructions:
- In a large mixing bowl, whisk mayo, sour cream, lemon juice, mustard, sugar, 1 t salt, and 1/2 t pepper.
- Add shredded chicken, celery, scallions, grapes, almonds, and herbs and mix well.
- Taste and, if needed, adjust with salt, sugar, and lemon juice.
