This is exactly what I remember from back when I shopped directly from Stoltzfus market.
OK, This seems to be the real deal to me, someone who grew up getting my dried beef at a butcher's shop. It's expensive so it's a treat, but very tasty, and best of all it's not that 'ground and formed' stuff of supermarkets. Yay!
