Stoltzfus Eats: Zucchini Tomato Relish

If you’re a gardener, this time of the year typically includes searching for new ways to use up the zucchini and summer squash that is growing in your garden. Today’s Stoltzfus Eats post includes two takes on a zucchini tomato relish that we hope you enjoy! For best results, we recommend using small zucchini or if you’re using up a larger zucchini that was hidden underneath some leaves, you’ll want to make sure to remove all the seeds from the center.

This recipe is originally from the Simply in Season cookbook, which includes a note that it is a great side dish for grilled meats, and we completely agree! We paired both versions of the relish with our Spinach Feta Chicken Sausage Grillers and it was a huge hit.


Zucchini Tomato Relish two ways

Version 1- oil and vinegar

  Version 1: Oil and Vinegar
  2 small zucchini, diced
  1 pound tomatoes, peeled and diced (approx. 2 large tomatoes)
  1/2 cup sweet onion, thinly sliced
  1/4 cup olive oil
  2 T apple cider vinegar
  2 T sugar
  1/2 t salt
  1/4 t pepper
  1 T fresh oregano, chopped
  1 T fresh basil, chopped
  1/4 t ground mustard



Directions:
Combine the zucchini, tomatoes, and onions in a medium bowl and set aside. In a small bowl, whisk together the remaining ingredients until the sugar is dissolved. Pour the dressing into the medium bowl and gently toss to combine.

 

Version 2: buttermilk ranch

  Version 2: Buttermilk ranch
  2 small zucchini, diced
  1 pound tomatoes, peeled and diced (approx. 2 large tomatoes)
  1/2 cup sweet onion, thinly sliced
  1/2 cup sour cream
  2 T fresh parsley, chopped
  2 T fresh dill, chopped
  2 T apple cider vinegar
  1 T milk
  1/2 t salt
  1/4 t mustard
  1/4 t pepper



Directions:
Combine the zucchini, tomatoes, and onions in a medium bowl and set aside. In a small bowl, stir together the remaining ingredients. Pour the dressing into the medium bowl and gently toss to combine. Refrigerate for an hour before serving.
